Beef Barley Soup Recipe?

I go back 10 yrs. with WW. I used to have a great Barley soup recipe. Probably when we counted food groups! Does anyone have it? It was pretty basic, beef, barley, carrots.........thanks! Carol

Amount Measure Ingredient -- Preparation Method

4 packets instant beef broth and seasoning mix

3 cups water

12 ounces cubed cooked beef

2 cups cooked barley

1 cup each, sliced mushrooms, diced onions and

shredded cabbage

1/2 cup each, diced celery, diced carrot and

tomato sauce

1 bay leaf

1 teaspoon salt

1/2 teaspoon thyme leaves

dash pepper

chopped fresh parsley


In 3-quart saucepan combine broth mix and water and heat; add remaining

ingredients except parsley, partially cover pan, and let simmer until

vegetables are tender, about 40 minutes. Remove and discard bay leaf; serve

soup sprinkled with parsley.


each serving provides: 3 protien exchanges; 1 bread exchange; 2 1/2 vegetable

exchange; 10 calories optional exchange Per serving: 323 calories; 31 g

protien; 9 g fat; 29 g carbohydrate; 1,514 mg sodium; 77 mg cholesterol
