White Chili

 

 

Makes 20 - 1 cup servings

Points per serving - 5

 

Points per serving does not include toppings.

 

Ingredients

1 pound of northern beans (soaked overnight)

6 cups of fat free reduced sodium chicken broth

4 cups of chicken breast (cut in bite size chunks)

2 Tlb of vegetable oil

2 medium onions (chopped)

2 cloves of garlic (chopped)

2 tsp of ground cumin

1 1/2 tsp oregano

2 cans (4 oz) green chilies

cayenne pepper

 

Toppings

fat free/low fat mozzarella cheese

fat free/reduced fat sour cream

Salsa

 

Mix the pound of soaked northern beans and six cups of chicken broth and simmer for three hours.

 

Mix together in a frying pan the chicken, vegetable oil, chopped onions, chopped garlic cloves, ground cumin, oregano, and green chiles. Sprinkle the cayenne pepper to taste. Simmer until chicken is completely done. Combine these ingredients with the beans and chicken broth and simmer for an hour.

 

Serve in bowls and top with mozzarella cheese, sour cream and salsa.
