wow that sounds yummy ~

 

I use it like regular cheese... on sandwiches, in soup (spicy pumpkin), melba toast. I love it!!

I just eat it on crackers right now, so I am very interested in hearing the answers! I just made a separate thread about a recipe for Laughing Cow Alfredo that's been rumored to exist. Anyone know of it?

Spread one wedge on one serving of any ultra-thin deli-type cracker (like everything or garlic flavor), put a slice of tomato on it and add just a little ultra-thin cut deli meat like smoked turkey, ham, etc. The whole thing is 2-3 points, depending on how much meat and/or cheese you use.

 

BTW-this is one of Oprah's favorite snacks! :bcb_bigsm

I love this stuff sooo much!!! I eat it with pretzel rods and on low fat triscut crackers. I've also used it in place of cr. cheese in Beef Stroganoff but it calls for *a lot* and I'm pretty attached to my LC cheese! ;)

These recipes are from hungrygirl.com. I haven't tried either of them, since I haven't tried (am scared of) those noodles! ;) But I'm sure some savvy person can modify it with other noodles.

 

 

Fettuccine Hungry Girlfredo!

(80.5 Calories, 3g Fat, 9 Carbs, 4g Protein, 4g Fiber = 1 Point!!!)

 

1 Package Tofu Shirataki Fettuccine Shaped Tofu Noodles

1/2 Wedge The Laughing Cow Light Cheese

1 teaspoon Fat Free Sour Cream

2 teaspoons Kraft Reduced Fat Parmesan Cheese

Salt & Pepper (if desired)

 

Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste. Enjoy. Serves 1.

Sautee it with mushrooms and spray butter.

 

On ENglish muffin with mushrooms sauteed in spray butter and slice of precooked bacon - 3 points.

 

On English muffin with tomato, slice of precooked bacon - kind of BLTish.

 

On English Muffin with dill weed, sliced cucumber and more dill weed. Sounds weird, but so good.

I read this here once long ago, and it is still my favorite way to use the Laughing Cow light cheese..I make a "FAKE" Mr Hero steak sandwich..Saute an onion(0 points) in a pan with Pam, then add and lightly saute with the onion, lean roast beef(1pt) cut into strips, and 2 wedges of the light cheese cut up(1 pt) place on light bread (I use the light italian, 4 slices 2 pts) and for a mere 4 points you can have 2 HUGE sandwiches! YUMMY! Give it a try!

You find it in grocery stores in the NOT refrigerated section. Even after you buy it, it does not need to be refrigerated. I often find it near the deli. Ask for it.

In my grocery it's refrigerated -- found near cream cheese, feta, etc.

It is also refrigerated where I purchase it. I would be scared NOT to refrigerate it. Even on the back of the container it says to "refrigerate after opening".

 

But to answer the question here, I use it mainly on bagels or a pita as a spread.

The Hero sandwich looks good, I am going to try that!

 

I found another recipe for the Laughing Cow Alfredo that I am going to try on Tues night (I figure it's safe to eat pasta the night of my WI and I should wear it off by the following week). I will let you know how it is.

 

I think it is just parmesan, molly mcbutter, laughing cow and one other thing.
