Barley Pudding

I created this recipe last night and it is so much BETTER than I had expected, you have to try this.....It is even better than rice pudding

 

INGREDIENTS

 

1 cup uncooked pearl barley

3 cups water

4 cups fat free milk, divided

1 cup Splenda

1/2 teaspoon salt

2 egg, beaten

2 tablespoons fat free margarine squeeze

1 teaspoon vanilla extract

1/4 teaspoon nutmeg

1/2 tsp cinnamon

raisins (optional)

 

DIRECTIONS

  1. In a medium saucepan, bring 3 cups water to a boil. Add barley and stir. Reduce heat to low, cover and simmer for 45 minutes.
  2. To cooked barley add 3 cups fat free milk, Splenda and salt. Cook over medium heat until boiling and then another 15-20 minutes while stirring frequently until thick and creamy.
  3. In a small bowl combine beaten eggs and remaining 1 cup fat free milk. Slowly add 2 large spoonfools of barley/milk mixture to milk and egg mixture to heat egg, constantly stirring. (to prevent scrambled egg effect).
  4. Add egg/milk mixture to put. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in fat free margarine, vanilla, nutmeg, and cinnamon. Serve warm sprinkled with cinnamon and raisens.

* Makes approximately six, one cup servings. (CORE or 3pts on Flex)

Bumping For All the rice pudding fanatics out there! I made this last night and it is amazing!

Thick and creamy and would have to agree it is better than rice pudding due to the barley and all it's greatness!

The only thing I changed is I did not add the ff margerine and spices to the whole batch. I also used just 3/4 cup splenda - may even be able to get away with a half a cup. I like to sprinkle plain cinnamon on my individual servings.
