verngator1 10 Posted January 22, 2007 From Lorna Sass' Pressure Perfect, pp 226...if you have a pressure cooker, you must have at least a book or two from Lorna!  Yummy, yummy comfort food...Core plus less than a point per serving for 4 servings...we actually got more like 6 servings from this.  2 1/2 cups chicken broth 1 cup chopped onions 10 ounces mushrooms, sliced 8 ounces whole wheat wide egg noodles 2 lbs boneless, skinned chicken, cut into 1 inch cubes 1 can (10 oz) 98% FF cream of mushroom soup 1/2 teaspoon dried thyme 1 cup frozen peas Salt and pepper to taste 1 TBS lemon (optional - we didn't need it) 2 TBS chopped fresh dill or parsley, for garnish  Combine the broth, onions, and mushrooms in a 4 quart or larger cooker. Add the noodels and scatter the chicken on top.  Lock the lid in place. Over high heat bring to high pressure. Reduce the heat just enough to maintain high pressure and cook for four minutes. Turn off heat. Quick-release the pressure. Remove the lid, tilting away from you to allow steam to escape.  Stir in the condensed soup, thyme, peas, and salt and pepper to taste. Gently break aup any noodles that are sticking together and release any clinging to the bottom of the cooker. Cover and simmer until the peas are defrosted and the noodles are uniformly cooked, usually about one minute.  Just before serving, stir in the lemon juice, if needed, to brighten up the flavors. Transfer to a large bowl or individual plates and garnish with the dill or parsley. Veronica the Pushy Core Zealot SW 196.2 - 7/3/6 WWGW 146.0 - down 50.2 in 24 weeks! CW 131 - 65.2 lbs gone FOREVER! Guest mp3ray Posted October 7, 2007 Does anyone know how this would change for a crockpot???? Thanks!
chefbna 10 Posted October 8, 2007 I would just cut the broth way down (you can always add more if you need to) and not put the noodles in the crockpot. i would cook them on the side. Â this looks awesome. i think I will try it the crockpot way too. All I have for a pressure cooker is a giant canner that I do my venison and green bean canning in! pueppi 10 Posted October 20, 2012 I'm going to try this in my crock pot this next week. Â If anyone has already made it in the crock, and would be kind enough to let me know what you did, that would be great. Â Otherwise, I'll try to fnd this thread when I am done and post how I made it. I'm not much of a cook, so if I can make it work, it will be fantastic!
