banana walnut (or not walnut) muffins

I am not understanding why the resipe builder is giving it a point a piece. It's all core unless you add the nuts but here it is anyway. DECADENT! I have more in the oven right now : ) HUbby can't get enough of them ! :bcb_grin

 

 

Banana Nut Muffins

POINTS® value | 1

Servings | 24

Snacks | for not even a point a serving you can add 1/4 cup of chopped walnuts.

 

 

Ingredients

3 1/2 cup uncooked oatmeal

1 1/2 cup Cream Of Wheat, 2 1/2 Minute

1/2 cup unsweetened applesauce

2 cup fat-free skim milk

3 tsp baking powder

2 tsp baking soda

1 tsp table salt

1/2 tsp ground cinnamon

1/3 cup SPLENDA No Calorie Sweetener

2 cups of mashed ripe bananas

 

 

Instructions

 

mix all ingredients and spoon into sprayed muffin pans. Cook at 350 degress for 20 minutes.

FYI- I just made these and they're fantastic. I used almonds and ground them up fine. It made 24 muffins!! Plenty to keep and to freeze!

they "are" core...just not officially according to weight watchers because its a baked good. But if you leave out the nuts , all the ingredients are core.

I thought the new policy (at least according to my leader) is core+core= core, baked good or not.

when it comes to things like this....I would say just use your own descretion. I didnt know that WW was supporting core+core=core. but to me...if its core...its core lol whether Im having it for a snack...or not.

WOWZA! These are super-duper good...probaby the best core baked good I've had. Very, very like the 'real' thing...perhaps too much like the real thing! :)

When I made them, I didn't cook the Cream of Wheat (the recipe didn't stipulate cooked) and they turned out fine. I like one (or two on an active morning) split and buttered with Promise and sugarfree blackberry jam, heated in the mic, for breakfast along with a bowl of fruit (usually fresh pineapple and sliced banana). Very healthy breakfast & delish.

Is the cream of Wheat cooked?

The Cream of Wheat is uncooked. You're basically using it like flour. Same as the oatmeal. And the same as oat bran in other baked good recipes.

 

I'd always assume uncooked unless the recipe says otherwise.

thanks so much for bumping this recipe. i think i will try it out this week, and see how it goes. i could totally use these kinds of recipes.

 

and i love things like banana muffins and bread, so excited to try it.

I made these today and DUH somehow left out the splenda...and they are perfect for me..even without it( I am not for real sweet things)...the applesauce and bananas give it plenty of sweetness--however they were not sweet enough for dh...butI love 'em

Could you make these as a "bar" type thing, in say a 9x13 pan, rather than individual muffins? I have a whole bag of frozen, sliced, overripe bananas that I've been saving for a rainy day :)

I think they would work fine as a bar---just put them in a 9X13 pan like you said and I think they would be great....they would be more soft like vs a crunchy type snack but they would still be good!!!

I've done them in a pan, and it turns out fine. It's similar to the consistency of baked oatmeals.
