Herbed Leg of Lamb

I have a 6 quart crockpot and can fit a 1/2 leg of lamb. I omit the flour and place the leg of lamb on a rack in the crockpot so the meat does not sit in the fat. The recipe says rice vinegar because I have a lot of food allergies but you could use another vinegar.

5 lbs leg of lamb

1 clove garlic -- peeled and halved

1 tbsp dry mustard

1 tsp salt

1/8 tsp pepper

1/2 tsp thyme leaves

1/4 tsp rosemary leaves -- crushed

1 tbsp rice vinegar

1/4 c flour -- optional

Rub all surfaces of lamb with garlic. Mix mustard, salt, pepper, thyme, rosemary and rice vinegar. Spread and pat herb mixture on surace of roast. Place roast on metal rack in crock pot. Cover pot and cook on low for 10 to 12 hours or until tender.


Remove meat. Skim off excess fat from juices. Turn control to high. Dissolve flour in small amount of cold water. Stir into juices in pot. Cook on high for 15 to 20 min. Serve herbed sauce with meat. .
