Need help with a zuchinni recipe!

Recommended Posts

Guest Editht

My sis gave me this recipe and it's awesome but I have no idea on the points. Help please??

4 cups grated zuchinni

3 eggs

1 jiffy corn muffin mix

1 1/3 cups of cheese (sharp is best)

Mix all ingredients except 1/3 cup of cheese together in a casserole dish. Bake for 1 hour at 350 degrees. Add remaining cheese to top during the last 20 minutes of baking. It's kind of like a souffle and kind of like a polenta. It's wonderful and filling and a little goes a long way! So any idea on the points? I had a smallish wedge and called it about 4 points, but it may be less.

You can also add chili peppers, or corn, and some spices to this, but I did the original recipe for my tryout of the recipe. It tastes so good and it's very filling! It's also a great way to use up tons of zuchinni! LOL! I thought a small slice along side a big bowl of zero point soup would be awesome! I also think it would be good with a fresh garden salad or salsa or even just chopped tomatoes with a little seasoning!

Edie:

If you give me the number of servings, I'll put it in the Recipe Builder on WWOnline.

I cut it into 8 slices... but I'd be interested in seeing the number of points for 6, 8, or 10 servings per dish. That will help me gauge how big to cut them! Thanks!

Edie,

I ran it through Master Cook and here's how it figures out point wise...

6 servings 3 pt. ea

8 or 9 servings 2 pt. ea

Oddly enough when I changed the eggs to Eggbeaters and the regular cheese to lowfat the points went up - 4 pts ea for 6 servings!
