0 point cucumber tomato salad

Hey guys! I made this for lunch and wanted to share. It's fabulous and a great spring side dish and SOOO easy!

 

Ingredients:

1/2 cup rice vinegar

3 tablespoons Equal or Splenda

3 cups unpeeled 1/4-inch thick slice cucumbers, quarters (about 2 medium)

2 cups chopped tomato (about 1 large)

1/2 cup chopped red onion

 

Prep:

Combine vinegar and Splenda. Add cucumbers, tomato, and onion. Mix well. Season to taste with salt and pepper. Refrigerate, covered, 1 to 2 hours to allow flavor to blend.

i ate a salad similiar to this all the time when i was younger , i loved it! Except mine had kidney beans in it too and it called for fat free italian instead of vinegar.

You can also add cilantro to this salad this wonderful!

I make mine with sliced (peeled) cucumbers, chopped up tomato and a little fat-free Zesty Italian dressing. Toss to coat and marinate in the fridge. Yum!!

I made this last night, but I used a dressing called Hendricken's Sweet Italian dressing. This may be a local (Midwest) only dressing, but the vinegar/Splenda combo would give the same result. This salad is GREAT!! Especially now when the tomatoes are starting to get ripe. I may add fresh sweetcorn next time!!

Had this for lunch a couple of times this week. It is similar to another salad that I make except that I use FF Italian Dressing, red onion, and green and red peppers with the cucumbers.

just made this but I had to use light italian came out to 2pts

one question though.. splenda has no points?

I only used 2 tablespoons I threw away the bad of splenda so is in a container I couldn't look it up!

Yummy! I have a church function to take this to next weekend!!!

It's Core and I always keep all the ingredients (except red onion) on hand! Can't beat that!

Made this 3X now - a staple already!

I sub white wine vinegar, though. Not a fan of the rice.

We make a variation of this in my family. It's a summer staple.

 

We use cucumbers, tomatoes, red onion, red wine vinegar, olive oil, oregano, parsley, basil, garlic, salt and pepper. Use olive oil sparingly. Both vinegar and oil bring out the juices of the tomatoes. The salad marinates best at room temperature, and it is always waaayyyy better the next day.

 

As others have commented, it is a great salad all by itself, but it makes a darn good topping for the traditional salad as well.

This is very similar to a Russian salad that I make all the time:

 

Mix sliced cucumbers, tomatoes and orange or yellow pepper and add in a cup of coleslaw mix. Instead of the dressing, I use light sour cream (you only need one tbs) and add in garlic salt to taste.
