Would you try my Chicken Lasagna?

I made up this recipe last night. I thought it was good, but my fiance noticed the spinach and wouldn't eat it. What do you think?

 

7 oz Whole wheat lasagna

2 cup 1% low-fat cottage cheese

1/2 cup grated Parmesan cheese

6 serving Ragu Parmesan & Mozzarella pasta sauce

4 oz part-skim mozzarella cheese

1/2 cup chopped frozen spinach thawed & drained

2 Tbsp Italian seasoning

13 oz canned Chunk Breast Of Chicken

 

Pour 3/4 c. Ragu into bottom of 9 x 9 sprayed pan. Place about 1/2 of the canned chicken over the sauce. Top with 3-1/2 lasagna noodles. Mix cottage cheese, parmesan cheese, drained spinach and Italian seasoning. Pour over noodles. Add another layer of noodles. Spread remaining chicken over noodles. Pour remaining Ragu sauce over the chicken. Top with shredded mozzarella cheese. Sprinkle with more Italian seasoning if desired. Cover with foil. Bake in 350 deg. oven 45 min. Uncover and bake for 10 min. more. Let stand 10 minutes before serving.

 

Makes 8 servings - 6 points each.

I'm glad you guys think it sounds good. I enjoyed it. I have 3 pieces in the freezer for the nights I'm home alone.

 

BTW, use uncooked noodles. When you cover the pan with foil, it keeps the moisture in and the noodles "cook".

Mary, I made this on Saturday and it was delicious! I didn't know not to cook the noodles so they were boiled but it still came out fine. I also didn't use canned chicken, I had leftover chicken breasts so I just chunked them up and used about a pound. Thanks again for the recipe, this is definitely a keeper.

I think it looks very good. I don't eat spinach though, and usually just substitute chopped broccolli in it's place and have never had a problem. Thanks for the recipe.

I made this and it's REALLY yummy! Freezes well too. I accidentally used the entire package of spinach instead of the 1/2 cup serving. It still was really good and at least I'm getting a lot of veggies, right?? LOL
