Another Breakfast Bar

made in a 9x13" pan, sprayed with Pam:

2 cups oatmeal

6T cornmeal

2 cups dry milk powder

1 1/2 cups applesauce

1 1/2 tsp. cinnamon

1 1/2 tsp. baking powder

6 T splenda

 

 

Mixed all together, and baked @ 350 degrees for 20 minutes" --AngelaKay, WW Core Plan board

I made this recipe yesterday w/ the crushed pineapple. It was a nice change. I usually have baked oatmeal for breakfast and this was similiar and the pineapple added a hint of sweetness to it. I'm having a hard time finding core recipes that I actually like but I think this is one that I'll hang on to.

I just made these, and....yum! These are really good, quick and easy to make.

An unexpected bonus- all 3 of my picky eaters liked them. So, I'll definately be making these again! :bcb_up

 

Oh yeah, I used the crushed pineapple.

No, I haven't had a chance to make this yet although it is still on my list of things to make.

 

I do have all the ingredients, I just have to find the durn time to do it.

Ok.

 

I made these just now while the coals were coaling for my grilled burgers.

 

I used the pineapple.

 

They are excellent, although I had to cook them for more than 20 mins, it was closer to 40. This may actually be the best baked oatmeal type thing I've tried to date.

 

I don't think they would be 1/2 as good without the pineapple though.

 

Best yet, they are SIMPLE to make! :)

I wonder...would these need to be refrigerated?

 

This would be perfect to take with me on my business trip that I'm going on tomorrow. I am not going to have a lot of time for any real meals and breakfast is out of the question. These would be perfect to pack with me and eat while I'm working.

Nancy took baked oatmeal on a trip. I leave baked oatmeal out for several days without worrying about it, and it has eggs in it.

 

Seems like it would be like a cookie. You leave them out, unrefrigerated.

 

Anybuddy else have any ideas on this one?............ :bcb_confu

I think I'm going to try making these tonight and see how they turn out. Dh is now doing Core and can really use things that are easy to carry with him for his 10-14hr days. I'll let you know how they turn out.

LOL had some this morning and I'm still fine, however, those had been in the fridge overnite.

 

Tomorrow morning will be the true test, no fridge in the hotel, these have been sitting out since I left the house ..first in my suitcase, then on the dresser. They still smell ok!

What do you think the sugar/honey substitute would be. I want to try these, but I avoid things made in labs like artificial sweeteners.

I made these today with DD as cookies instead of bars.

 

All I can say is THANK YOU :bcb_up. I didn't add the pineapple, just 2 teaspoons of maple extract along with the original recipe.

 

These might become "ice cream sandwhich" cookies soon in my house, they are just the right texture.

 

I had 38 good-sized cookies, baked for about 12-14 minutes at 350 in my convection oven.

 

Gotta love such a healthy choice for the kids to enjoy on-the-go.

Stupid question - is the pineapple INSTEAD of the applesauce, or in ADDITION to it? I just mixed these up and put it in in addition to the applesauce, and it looks awfully juicy there in the oven.

 

By my calculations, if you cut the recipe into 6 servings, each serving is a dairy (1/3 cup powdered milk), a fruit(ish) (if adding rather than substituting the pineable is right), and a grain(ish) serving. That's a pretty good breakfast for me! I suspect I'll really cut it into 12 pieces and have it with a glass of milk, but it's good to know I could have a balanced breakfast on the run.

Thanks, Viktoria. After cooking for about 40 mins (same as an earlier tester) they seem done. They're more cakelike than I thought they would be, and are very good. I added some coconut extract (seemed to go with the pineapple), which tastes good.

 

I know some people have concerns about baked goods, but these will be a great way for me to get some whole grains and fruit in, both of which are real problems for me. I can go all week without eating any whole grains or whole wheat pasta if I don't consciously insert them into the menu. Ditto for fruit.

Question about the pineapple: I bought crushed pineapple last week to make something else and it was in a "short can" - about 8 ounces? Is that the size can you use to make these? Also, I read somewhere that (real) sugar is a preservative in baked goods and that is why you should always refrigerate anything that is made with artificial sweeteners.

I made this today. To the original recipe I added 20 oz of drained pineapple and put in 3/4 c splenda (I wanted them to be sweet).

 

I also added 1/4 c raisins (adds 3 pts. for entire recipe).

 

They are out of the oven and cooled.....are YUMMY!!!

 

We'll see if I like them even better when they are cold.

 

I think I'll refrigerate these, but I think they would also do find if they had to sit out for a trip or something.

I did this for a snack for my kids....

Oh......My.......Goodness!

Take one square of the breakfast bar. Slice it in half. In the middle put 1/2 TBSP frozen ff cool whip so it makes like a cream sandwich.
