Terribird 10 Posted April 12, 2007 Noodles with Peanut sauce  2 cups cooked noodles (I use whole wheat spaghetti) 2 tbl peanut butter 1 tbl soy sauce 1 tbl hot water dash of ginger  Mix peanut butter, soy sauce, ginger and hot water in a little bowl till smooth. Pour over noodles.  4 (1/2 cup) servings = 3 pts per serving 2 (1 cup) servings = 6 pts per serving.  I'm thinking of adding stir fried shrimp, a sprinkling of crushed peanuts, chopped green onions and a lime wedge to squeeze over all and make it a Pad Thai subsitute. 60 lbs Gone! LilPup 10 Posted April 30, 2007 I make something similar to this, I do add a sprinkling of peanuts, I have added shrimp, but I really like to add a shredded carrot. I have been wondering how to make a good substitute that is points-friendly and not so spicy. This sounds perfect. In fear of eatting it all I made 1 1c serving for 6pts.  1 cup cooked linguine noodles 1 tbsp PB 1 tsp of soy sauce 2 tsp of pasta water 1 chopped green onion  It was delicious and filling, next time I am going to add some diced carrots and snow peas.
