Urgent - Can someone figure points on this please?

Recommended Posts

Guest Thinkin Thin

We are having a luncheon today at work and a coworker brought a soup that I think will be low in points. I do not have my WW materials with me today, and their website only lists dry beans by weight, not capacity. I would greatly appreciate it if somebody could figure the points for me on this. Thanks very much,

Patty

MEXICAN BEAN STEW

1 cup dry pinto beans

1 cup dry black beans

1 cup dry garbanzo beans

1 TBL olive oil

1 cup diced onion

4 cloves garlic, crushed

1 tsp ground cumin

1 (14.5 oz) can crushed tomatoes

2 cups frozen corn kernels

1/2 tsp ground cinnamon

salt, pepper and cayenne pepper to taste

Rinse and sort dry beans. Place in a large bowl and cover with water. Soak overnight. Drain beans and place in a large pot. Cover with water; bring to a boil and cook for 1 hour or until beans are tender. Heat oil in a small saucepan over medium high heat. Saute onion and garlic until onion is transparent. Stir in cumin. Add the onion mixture and crushed tomatoes to the beans. Simmer for 20 minutes. Stir in corn and cinnamon and cook 15 minutes more. Season with salt, pepper and cayenne to taste. Makes 6 servings.

Thanks again!

Patty

Here's what I have:

Beans: 4 points per cup (uncooked), so 12 points.

Oil: 3 points

Corn: 2 points

Onion: 1 point (if you count onion) or 0 points (if you don't) - either way, it doesn't affect the per serving point count.

All other ingredients are "free". total for the recipe is 18 points, so 3 points per serving.

This one sounds like a keeper to me...

Thanks very much! From the looks of the pot of soup, 1/6 is a very large serving!
