Auntkellwe 0 Posted May 3, 2007 Diet Coke Chicken    Makes 4 servings  Ingredients:  4 skinless boneless chicken breasts 1 cup catsup 12 oz can diet cola  Put chicken in non-stick skillet. Pour catsup and diet cola over the top. Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce and it's only 4 points per serving. Yummm! Anyone else worry about heating up aspartame? I think I've read too many of those aspartame is evil chain mails! bethel 10 Posted June 8, 2007 I put 2 choped onions, 1 cup catsup and 1 cup diet coke in a ot, then added a 2 lbs pork tenderloin (cut in thick slabs). I brought it to a boil, then let it simmer, covered, for 3 hours (was going to use a crockpot, but got started too late). After a couple of hours, I was able to break the shred the meat just using a wooden spoon.  I added a bit of chipotle sauce to taste - it came out delicious! Do you think it would make a good "pulled pork" recipe?I actually do this as a crockpot pulled pork recipe...except I use diet root beer and slice an onion under the roast. It is completely awesome. Sugarfree BBQ sauce is the issue, since DH is diabetic. There are a couple out there...one is in TX at a place called Dickey's. It rocks my socks...but alas...pretty long drive for a bottle of sauce.
