Buffalo Chicken Macaroni Salad

BUFFALO CHICKEN MACARONI SALAD- 3PTS

1/2 cup FAT FREE RANCH SALAD DRESSING

1/4 Cup Miracle Whip® light

1/4 Cup blue cheese, crumbled

1 Tablespoon FRANK'S HOT SAUCE

1/4 Teaspoon PAPRIKA

1 1/2 Cups chicken breasts -- COOKED AND CHOPPED

1/2 Cup CELERY -- FINELY chopped

1/4 Cup RED ONION -- Finely chopped

1 1/2 Cups macaroni, whole-wheat -- DRY

1 medium TOMATO -- DICED

Cook macaroni according to directions. Rinse under cold water and refrigerate until cold.

In a large bowl, combine dressing, mayonnaise, blue cheese, hot sauce and paprika. Add remaining ingredients. Mix well to combine. Gently stir in tomatoes.

Cover and refrigerate at least 30 minutes. Gently stir again just before serving.

In my fridge chillin'. I only used 1 cup pasta and increased celery for filler.

IMO: It was really good, but I would definitely cut back on the Blue Cheese as it was a bit over powering.

Thanks for the recipe! Sounds awesome - I will buying a tomato and whole wheat macaroni tomorrow at the store (I just happen to have everything else by some weird stroke of luck!)

 

Do you think it would be fine to decrease the amount of ranch/blue cheese/mayo to bring the points down to 2 or 2.5 for a serving w/o making it too dry?

Ohhh, this one sounds good! I'll have to leave out the blue cheese, though. Makes me gag!!!:bcb_huh:

Ok I finally made this yesterday and have been eating it on greens for lunches. Deeee-lish! :)

 

(and, I think it would fine w/o the blue cheese if you wanted to omit it)

I made this last night as a main dish and thought it was great! I could do without the onion, but it's still not bad.

 

The only change was to use Frank's Wing Sauce instead of Hot Sauce. I'd like more buffalo flavor, but it's tangy enough.
