2 pt Oatmeal Muffins

In my search for great low point healthy muffins I have made alot of rock-like muffins b/c using Whole Wheat Flour does that. I found a new way to make them and they are moist and wonderful. I use Whole Wheat Pastry Flour-found in health food section of grocery stores or in the Health Food Stores.

 

1 cup of old fashioned rolled oats (not instant)

1 cup of non fat milk (I used soy milk)

1 Cup of Whole Wheat Pastry Flour ( Can use wheat flour)

1/2 light brown sugar

1/2 cup applesause unsweetened (I used a mashed banana)

2 egg whites

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp sugar

raisins or nuts (optional add in points)

 

Soak the oats in the milk for 1 hour. Preheat the oven to 400 degree's. Spray muffin pan with cooking spray. Combine the oat mixture with the applesause (or banana) and egg whites, and mix until combined. In a separete bowl measure and whisk the dry ingredients together. Add the wet ingredients to the dry until just combined. Add nuts or raisins if desired. DO not over mix the batter. Spoon into muffin pan. Combine Cinnamon and sugar and top each muffin with some of the mixture. Bake for 20-25 minutes or until done. Remove from pan, cool and enjoy.

I also ran the numbers with adding wheat germ and it still was 2pts. I havent tried it yet but I try to add it when ever I can to meals for the added health benefits.
