Marsala braised quinoa w/mushrooms in roasted tomatoes

My WW leader raves about quinoa and I have collected a lot of recipes from Cooking Light discussion group. This one was very nice:

Marsala braised quinoa w/wild mushrooms in roasted tomatoes

6 servings: 2 points

1 C. quinoa

1 can veg. stock + water to yield 2 cups

1 T. olive oil

1 large shallot, minced

1 tsp. dried basil

¼ C. marsala wine

2 Tbsp. tamari

2 oz. cremini mushrooms

2 oz. shiitake mushrooms

2 oz. button (white mushrooms)

¼ C. fresh basil

6 roasted Roma tomatoes

 

Cook quinoa according to package directions with the veg stock/water. Remove from pan, wipe pan clean.

Heat oil, add shallots and cook about 5 minutes until soft.

Meanwhile, mince mushrooms in mini-prep.

Add mushrooms and dried basil to pan, stirring well and cook until deep brown. (Add additional veg. stock if necessary.) Add quinoa and mix well. Add Marsala, stir to blend, then add tamari and stir. Cover several minutes. Remove from heat, stir in chopped basil.

 

Fill roasted tomatoes w/quinoa mix.

Roasted tomatoes: slice in half lengthwise, scoop out seeds and core. Roast in 450 degree oven for 10 minutes or so.
