Ramen Noodle Frittata

7 servings at 4 points each

 

6 oz chicken flavored ramen noodles

3 eggs 6 egg whites

2 teaspoons Blue Bonnet Light Vegetable Oil Spread

1/2 cup shredded fat-free cheddar cheese

 

Place noodles in a saucepan filled with boiling water, reserving the seasoning packet. Cook until tender, and drain. In a medium bowl, whisk together the eggs and seasoning packets from the noodles. Mix in noodles.

 

Melt butter in a large skillet over medium heat. Add the noodle mixture, and cook over medium-low heat until firm, 5 to 7 minutes. Cut into fourths, and turn over to brown the other side for 1 to 2 minutes. Sprinkle cheese over the top, and serve.

Now I have a way to get rid of all the Top Ramen in my cupboard :bcb_up

This would be probably be good with shirataki and bouillon though.

So I made this with shirataki (0), 1 c. eggbeaters (3), 1 tsp. bouillon (0), and 1/4c. RF cheese (2) for 5 pts. Not bad. :bcb_smile

Ehhh... I posted that reply after eating only a couple of bites. By the end of breakfast, I was gagging. I personally don't like shirataki noodles much but a lot of buddies here love them. They are noodles made out of tofu or yam and you find them next to the tofu in some stores - I have to go to the local Japanese food store. They are 0 pts per bag (unless you count by half points, in which case the tofu is 0.5 pts and the yam is 0).

 

I'm sure that when I use ramen and real eggs I won't have the same reaction, but if you love shirataki, you'd love my version too.
