Terribird 10 Posted July 10, 2007 I just found this on epicurious.com and exchanged the full fat mayo for fat free. The dressing is 5.5 pts for the entire batch. They served it with Rotisserie chicken on top (I'm eating now). It is "pickelly" tasting so I'm thinking I would use Tuna fish with it next time  Thousand Island Cole Slaw  1 cup fat free mayo (4pts) 1/4 cup ketchup (1pt) 4 tsp cider vinegar 2 tablespoons pickle relish (1/2 pt) 1/3 cup grated sweet onion (like vidalia) 1/2 tsp salt 1/4 tsp pepper 10 cups of shredded cole slaw mix Rotisserie chicken or Tuna Fish (amount you want to top it with)  Mix first 7 ingredients together well, Mix into cole slaw. Top with meat of choice. 60 lbs Gone! (10/13/07) SW 281.2 / CW 220.8 / Goal 159 (10/13/07) Part II SW 277.2 / CW 267.2 / Goal 169 10lbs gone!
Guest held1998 Posted July 11, 2007 This looks great! I can imagine topping it with some bottled pickled ginger and some shrimp or tuna. Â Run through Mastercook, serving 10 it is only 42 calories per serving using sugar-free ketchup. I will be making this before the end of the summer for sure! Â Thanks for posting it.
