ready2fly 10 Posted July 13, 2007 This is my tweak on the Yogurt Bran Muffins found on Fiber One's website. These muffins taste wonderful. I did them with blueberries. They came out really well. Yogurt Bran Muffins: Servings: 12 Ingredients: 1 cup fiber One® cereal 1 egg 1/4 cup vegetable oil 12 ounces yogurt, skim milk 1 1/2 cups oat bran 32 grams Splenda, Brown Sugar Blend 1 1/4 teaspoons baking soda 1/2 teaspoon salt 1/2 cup blueberries (you could use raspberries if you wanted) Instructions: Heat oven to 400°F. Grease bottoms of 12 muffin molds, or use baking cups. Crush cereal. Stir together egg (slightly beaten), oil, and yogurt. Stir in cereal and dry ingredients (except berries), just until moistened. Fold in berries. Spoon batter evenly into tins. Bake 18-20 minutes or until golden brown. Nutrition: Per Serving: 118 Calories; 6g Fat (38.0% calories from fat); 5g Protein; 18g Carbohydrate; 4g Dietary Fiber; 18mg Cholesterol; 272mg Sodium. Guest jkmyles Posted August 8, 2007 I don't believe Splenda Brown Sugar is not Core. It is mixed with regular brown sugar 50/50. It has twice the sweetness as regular brown sugar so be careful measuring. Share this post Link to post Share on other sites
