My 1 point Blueberry or Pineapple Muffin Recipe

I thought I would share my 1 point pineapple/blueberry muffins with everyone. You can use either blueberries or pineapple in it. Mom bought a whole pineapple the other day and gave me half. I cut it up in little chunks last night and put it in place of the regular blueberries and I got rave reviews about it from my gang - even more than when I use blueberries.

 

1 1/2 cups whole wheat flour

1 1/8 cups plain all purpose flour

1 1/2 tsp. baking soda

3/4 tsp. cinnamon

1/4 plus 1/8 tsp. salt

3/4 cup quick-cooking oats (oatmeal)

4 1/2 tblsp margarine

1/3 cup plus 1/9 cup of Splenda (weird aren't I?)

1/2 cup egg substitute

1 1/2 cups mashed banana

1 1/2 tblsp. fresh lemon juice

1 tsp. vanilla extract

3/4 cup Apple Sauce

1 1/2 cups fresh or thawed blueberries or 1 1/2 cups fresh or canned crushed pineapple (drained).

 

Preheat oven to 350 degrees. Basically I just dump everything in a big bowl except the fruit and stir it up really well. Then add the fruit and gently fold it in. Spray a muffin pan with nonstick pan spray. My muffin cups hold almost a 1/2 cup of water each, so they make a good decent sized muffin. This yields 24 muffins. Depending upon your oven, bake between 15-20 minutes.

 

I always have to figure up the points value of recipes for myself cause I've figured out that different brands can carry different values, so here is my NI for the items that count.

Calories - Fat - Fiber

King Arthur Traditional Whole Wheat Flour 660 - 3.0 - 24

White Lily All Purpose Flour 512 - 1.4 - 3.8

Cinnamon 4.5 - .1 - .9

Wal Mart brand Oatmeal 225 - 4.5 - 6.0

Promise ff tub margarine 22.5 - 0 - 0

Egg beaters 30 - 0 - 0

Banana 300 - 1.11 - 8.8

Lemon juice 6 - 0 - .1

Vanilla extract 2 - 0 - 0

Wal Mart brand unsweeted Apple Sauce 75 - 0 - 3.0

Fresh Pineapple 112 - .28 - 3.3

 

Total Calories - 1949 Fats - 10.39 Fiber - 49.9

 

divided by 24 muffins Calories - 81.21 Fats - .43 Fiber - 2.08

 

1 WW Point per muffin or 1.24 points if you go two decimal places.

 

To use blueberries or canned pineapple just take out the values for the pineapple above, add in those for the other fruit and divide by 24 muffins.

Let me know if you like them Cathy. One thing I forgot to mention, my daughter said she bet they'd be really good if they had strawberries in them also. I guess a person could chop them up in small pieces and use. I'm not a huge strawberry fan, but if anyone tries them I'd sure be interested in hearing how they turned out.

Do these make 24 regular or mini size muffins? They sound delish!

Medb48, I hope you like them as much as we do.

 

I made two more batches yesterday for my gang. One I made with fresh peaches, and the other with apples. I have to say that the pineapple is still our absolute favorite around here. We couldn't taste the peach and apple quite as much as we could the pineapple. I was wondering if using canned peaches wouldn't bring out the flavor more .... I'm sure I'll give it another try before long though - lol.
