Sausage and Black Bean Soup - 2 pts

This makes a large pot of soup, so be ready to freeze or share. It's very easy, very filling, and very pretty!!!

Sausage and Black Bean Soup - 2 pts

 

16 oz. turkey kielbasa or smoked sausage, diced (16 pts.)

1 green & 1 red pepper, diced

1 large onion, diced

2-3 cloves garlic, minced

3 (14 1/4 oz) can FF less sodium Chicken broth (1 pt.)

3 (15 oz) cans no-salt added black beans, rinsed and drained (10.5 pts.)

2 (15 oz) cans whole corn, drained (7 pts.)

1 cup salsa

2 Tbls. Taco seasoning (optional)

 

1. Coat a medium saucepan with cooking spray; place over medium-high heat until hot. Add sausage, and sauté 1 minute or until sausage begins to brown. Add onion & garlic; sauté until onions are translucent. Add peppers; sauté 1-2 minutes.

 

2. Add broth, bring to a boil. Reduce heat to low, add beans, corn, and salsa. Simmer, covered for 15 minutes.

 

Total recipe: 34.5 pts. App. Yield: 15 cups 2.3 pts. per cup

I made this for dinner tonight, and yummo.. i can wait to actually eat it asside from a quick sample! I also have to take some dinner to a family at church who just had a baby tomorrow night, and I'm considering taking some to them... if I can bear to part with it!! Imay actually give up my after dinner planned snack to pend the points on extra soup!

This looks like a great recipe! I am going to try it, but will probably use whie beans (the black ones make stuff look dirty to me) and leave out the corn all together

I tried this with canadian bacon instead of sausage. Very good. I also blended some extra black beans in a food processor and added it to the soup to make it a bit thicker and to add more fiber. Thanks for the recipe. We also had FF sour cream, diced up avacado and salsa on the side to stir in. Would have been great with some baked tostitos scoop but I didn't have any.
