Moroccan Crockpot Chicken

Serves 4



8 Boneless/skinless chicken tenders

1 cup onion, chopped

1 cup baby carrots

1 Tbs. olive oil

1 can mandarin oranges in water, drained

1/2 cup water

1/2 tsp. salt

1/2 tsp. ground cumin

1/2 tsp. cinnamon

1/4 tsp. red pepper

1 Tbs. lemon juice



1. Spray inside of large crockpot with cooking spray.


2. Mix water, spices and lemon juice in a small bowl. Set aside.


3. Layer ingredients in crockpot in this order:


o onions

o carrots

o water mixture

o chicken

o olive oil

o oranges


4. Cook on low for 8 hours.


Serving Suggestion

Serve over rice or couscous.
