Potato Roesti with salmon and herbed sourcream

Frozen Hashbrowns (The ones I used were 1 pt for 1 1/2 c! I used 3 cups for two people)

Garlic Powder

Onion Powder


2 teaspoons vegetable oil


Kosher salt and freshly ground pepper

In a 10-inch non-stick saute pan spray pam and put in oil. Spread potatoes into a thin layer in the pan and sprinkle with seasonings. Brown for 5 to 7 minutes. Invert the roesti onto dinner plate and remove pan from heat. Flip and slide roesti into pan raw side down and brown for an additional 5 to 7 minutes. Remove to a rack and hold in a warm oven.



I thought these were fantastic with a little smoked salmon and FF sour cream mixed with Chives and Dill YUM!!!!!!!!!!!!!


Altogether the Latkes were 2 pts, the Salmon was 3 and the sourcream mixture was 1, so 6 points. Good for Breakfast Lunch and Dinner.
