lolap 10 Posted November 16, 2007 1/2 cup bulgar wheat (dry) Veggies (amounts as desired): Peppers, green onion, pickled banana peppers, cucumber, green onion, spinach... whatever you like... 3 oz reduced fat feta cheese 12 olives chopped into rings 1 cup of chickpeas (garbanzos) 1 tbsp EVOO juice of one lemon mint (as much as you like) parsley  Make wheat as package instructs. Chop all the veggies and put in bowl. Crumble feta, chop olives. Put feta, olives and chickpeas into veggie mixture. Chop herbs and toss with mixture. Dress salad with EVOO, lemon, salt and pepper. Once bulgar is cooled mix with salad mixture and eat. I got 12 points for the whole recipe... I ate two big bowls for 6 points.
