Black Bean Brownies

This is probably an old recipe, but it's new to me... and they are really good for two points!

 

1 15 oz can black beans, drained and rinsed

1/4 c. water

1 brownie mix (check the points... I used Pillsbury)

 

Buzz the beans and water up in the food processor until smooth. Beat bean mixture and brownie mix (no egg or oil). Spread into 9 x 13 pan that has been sprayed with cooking spray. Bake as brownie package directs. Cool. Cut into 24 brownies.

 

Don't shudder girls... these are really soft and fudgy with the added bonus of fiber!!!

I'm going to try these - I'm all for more fiber, and black beans are a staple in my kitchen.

I have these in the oven as I type! So excited! I couldn't tell ANY difference in the batter; and since there was no egg, I gave some batter to my 1 year old and 3 year old, it's a hit! My 1 year old opened his mouth said "Ahhhhhhhh" for more! :bcb_LOL: Hopefully DH is just as fond, and trickable, as these two!

I made these last night with low fat Betty Crocker mix and they came out pretty good. My 9 yr old son and hubby really liked them and had no idea I made them with black beans! Thanks for the recipe it's great for chocolate craving days.
