Spinach & Artichoke Dip -- 3pts for whole thing

This is Delicious!


5oz fresh spinach, rinsed & stemmed

2 garlic cloves, minced

15oz can butter beans or cannellini, drained and rinsed

1c chopped scallions

2 TBSP chopped frsh basil

2-3 TBSP fresh lemon juice, to taste

15oz can artichhoke hearts

salt & pepper to taste


Using just the water clinging to the leaves after rinsing, steam the spinach until just wilted, 2 or 3 minutes. Drain.


In a food processor, puree the spinach, garlic, beans, scallions, basil, and 2 TBSP of the lemon juice until very smooth. Fold in the artichoke hearts and add more lemon juice and salt and pepper to taste. Serve chilled or at room temperature.
