Turkey Eggplant Casserole 3 pts./serving

1 1/4 lbs. ground turkey

1 onion chopped

3 garlic cloves minced

1 (28 oz) can of crushed tomotoes

1 green pepper seeded and diced

1 red pepper seeded and diced

3/4 c. seasoned bread crumbs

1 tsp dried basil

1/4 c grated Parmesan cheese

 

 

1) Preheat oven to 350 & spray pan with cooking spray ( I use the olive oil one)

 

2) Spray large saucepan or Dutch oven with spray; heat. Add turkey, onions, & garlic. Cook, stirring as needed, 5-6 min, or until turkey is browned and onion is softened.

 

3) Add eggplant, tomatoes, peppers, bread crumbs and basil and bring to a boil, stirring as needed.

 

4) Transfer turkey mixture to baking dish. Bake, covered saith aluminum foil until veggies are tender. 45-40 min.

 

5) Uncover, sprinkle with cheese, and bake until cheese is lightly browned. about 15 min. Let stand 5 min before serving.

And add 1 large eggplant (cubed)! I've got this in the oven now and it looks like Pookarina forgot to list eggplant. Smells delicious.
