Looking for a Duck recipe

Does anyone have any good recipes for cooking duck? I am married to a hunter & have lots of great venison recipes. However, I cannot find one for duck.


Any suggestions?

This one is really good....... but keep in mind that wild duck is leaner than farm raised duck and since Mastercook did not recognize Muscovy Duck, there's a huge discrepancy in the points calculations. With Mastercook, a serving works out to 10 points (using just duck). According to the author, this should only be five points. Enjoy!!

Roasted Duck Breast with Pineapple Chutney

Amount Measure Ingredient -- Preparation Method

For Marinade:


2 teaspoons chile paste -- no oil variety

3 Tablespoons soy sauce, low sodium

3 tablespoons lime juice -- freshly squeezed

1 tablespoon honey

1/4 cup unsweetened pineapple juice


14 ounces duck -- breast, Muscovy


For Chutney:


1 1/2 cups pineapple -- cubes, fresh

1/2 teaspoon lime zest

1 large lime

3/4 cup unsweetened pineapple juice

1/2 tablespoon crystallized ginger -- chopped

1/2 teaspoon jalapeno pepper -- chopped

2 tablespoons golden raisins

1/4 cup chopped red bell pepper

1/2 cup chopped red onion

2 tablespoons white wine vinegar


Mix all the marinade ingredients (first five ingredients) in a large bowl. Put the duck breast in the marinade, cover, and refrigerate at least an hour.


In the meantime, bring all the chutney ingredients (fresh pineapple through white wine vinegar) to a boil in a medium saucepan over medium heat. Reduce heat to low and simmer, uncovered until the fruit is tender and the sauce has thickened, about 45 minutes. Stir occassionally.

Preheat a grill or broiler when the chutney is almost done.

Grill or broil the duck for five minutes each side, or until a light crust forms and the meat inside is pink. Slice into 16 medallions.

Fan 4 medallions on each serving plate and spoon chutney over
