Stuffed Peppers

Okay made these last night and they were super yummy and very filling. Used left over white rice.


Servings: 4

Pre heat oven at 400 F


4 medium green bell peppers = 0 pts

8 oz ground turkey (7% fat) = 8 pts

1 cup cooked white rice = 5 pts

1 medium onion, diced = 1 pt

1 cup canned dice tomoatos = 1 pt

3/4 cup Hunt's Spaghetti Sauce = 1 pt

1/2 cup water = 0 pt

1 tbsp minced garlic = 0 pt

1 tbsp Chicken boulion = 0 pt

1 tbsp Pizza Seasoning (WalMart) = 0 pt

pinch fennel seeds = 0 pt


1/4 cup 2% sharp cheddar

cheese divided into 4 equal servings = 1 pt



1. Put large pot of water on to boil. Prepare peppers by cutting off tops as close to stem as possible, but allowing large opening to stuff. Save tops/stems for filling.


2. Boil peppers for about 5 minutes and then drain and cool.


3. Brown ground turkey in skillet. When almost fully cooked, drain. Add diced onion and some diced green pepper from the tops to taste/preferrence.


4. When turkey is cooked through and onion is transulscent add pizza seasoning and fennel seeds. Continue to cook until onions and turkey start to brown and get a bit crusty.


5. Add water to skillet and stir to bring up bits of turkey, etc up from pan to add flavor. Add diced tomatoes and chicken boulion and stir. Bring to slight boil then set pan on low and reduce for about 2-4 mintues. You want some liquid to remain.


6. In seperate bowl add rice and then turkey/tomato/seasoning mixture and stir together. Add in 1/2 c spaghetti sauce. Stir until combined. Taste for seasoning.


7. Place peppers opening side up in square glass pan. Stuff peppers with rice/meat filling. Any extra filling gets put in the bottom of the pan. You can prepare up to here and put in fridge so you only have to stick in oven when you get home. Or freeze at this point. Everything is cooked.


8.Cover with foil and bake in 400 degree F oven for 40 minutes.


9. Uncover after 40 minutes and add the remaining 1/4 c spaghetti sauce over the tops of the peppers in equal portions. Bake uncovered for 5 minutes.


10. Remove from oven and cool 5 minutes. Serve cut open with 1/4 of the 1/4 c 2% cheese sprinkled on each serving.


Total Points = 17

Points per serving = 4.25

Servings = 4



*** The Hunts Spaghetti sauce comes in a large can near the bottle sauces. It has 50 c/ 0 f/ 1g fiber per 1/2 cup.
