Spinach & Artichoke Pie (CORE)

I just made this yesterday and it was awesome! Found the recipe online. Here goes:

 

Ingredients:

10 ounces of frozen spinach, defrosted and drained

1 cup mushrooms, sliced

1 cup artichoke hearts, chopped

2 tsp olive oil (2 for each serving)

1/2 cup fat-free cottage cheese

1/2 cup fat free ricotta cheese

4 TBSP fat free feta

2 tsp garlic, minced

1/2 medium onion, chopped (I suggest Vidalia)

3 eggs

salt and pepper to taste

Non-stick cooking spray

 

Directions:

 

Preheat oven to 350 degrees.

 

Spray pan with non-stick spray. Saute mushrooms and onion in olive oil with garlic for about 10 minutes. Add spinach and simmer until liquid has fully reduced.

 

In a bowl, beat eggs and add remaining ingredients. Mix the sauteed vegetables into the egg mixture. Spray pie dish with non-stick spray. (Cooks best in a large round baking dish). Bake for 40-45 minutes. (I did have to blot off a little excess liquid from the top with a paper towel when I took it out of the oven). The thicker the pie (or smaller the dish), the longer it will take to bake.

 

I ate 1/2 of the pie as a meal and I was very satisfied. (not bad, 1 and 1/2 eggs and 1/4 cup each of the cheese, the rest is all veggies and I get one of my tsp of oil in!).
