Mary Zotz's Sweet n Tangy Garlic Chicken

I tried this the other nite for dinner and it was great! I also threw in some chopped bell pepper and mushrooms and turned the heat up the last few minutes of cooking time to thicken the sauce. Sorry, don't know the points.

 

Sweet & Tangy Garlic Chicken

 

Servings: 6

 

6 (4oz) Skinless Boneless Chicken Breasts

1 tablespoon Olive Oil

1/2 teaspoon Black Pepper

1 1/2 tablespoons Tomato Paste

3 Cloves of Garlic (crushed)

1 cup Chicken Broth

1/4 cup Balsamic Vinegar

4 tablespoons Scallions (chopped)

1 tablespoon Honey

 

Heat oil in a medium/large frying pan.

Add chicken and brown on all sides (around 10 minutes)

Remove from pan and drain off any excess fat.

Add remaining ingredients to the pan & bring to a boil.

Return the chicken to the pan & reduce heat

Simmer for 30 minutes

CARBS 3.6 gr

Sounds good! I'll have to try it. I ran it through the recipe builder on WWOnline and it looks like it's 4 points/serving.

I made this Tuesday night and it was SOOO good. DH loved it also. Definately a keeper--Thank you :D !

I made this tonight and I loved it! thumbup.gif

 

The whole family enjoyed this meal, including a picky 14 year old. I also added some fresh, sliced mushrooms to it....and a little thyme.

 

I'll be making this again, thanks!

I made this last night and my fiance loved it!!! It had the best flavor. We served it with linguine but it would be awesome with rice too. Thanks for sharing this one.

I am about to try this... it is cooking right now. I tried the sauce and it was a little to vinegar like for me so I added one tbs of brown sugar. I can't wait.. yum! wave.gif
