Peanut Butter Muffins

Points/Serving: 3

 

Ingredients

2 cups all-purpose flour

1/2 cup splenda

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup reduced fat peanut butter

3 tablespoons cold Blue Bonnet Light Vegetable Oil Spread, divided

2 eggs

1 cup milk

1/4 cup lite maple syrup 3 tbs sugar

 

Directions

1. In a large bowl, combine flour, splenda, baking powder and salt. Cut in peanut butter, maple syrup, and 2 tablespoons butter until the mixture resembles coarse crumbs. Beat the eggs and milk; stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full.

2. Bake at 400 F for 15-17 minutes or until knife inserted in center comes out clean.

3. Combine remaining butter and sugar; melt and sprinkle over the tops of muffins.

This sounds like an awesome recipe. Peanut Butter is one of my weaknesses. Thanks for sharing.

 

Ok, I made these this weekend and let me tell you that they are awesome also kid approved.
