Anyone have a good Core appetizer recipe?

I'm getting together with a bunch of my friends on Friday night to watch Sex & The City and I have to bring a snack or appetizer to share. Does anyone have a good recipe that will keep me on track?

When I need to take appetizers, I love to take a raw veggie platter w/ FF ranch dressing or fruit tray w/ SF/FF pudding mixed with FF/plain yogurt for the dip.

Veggies with hummus made without added oil or tahini - I add roasted red peppers & a little chilli powder to bump up the flavour.

 

For a treat using your WPA's you can make your own pita chips using wholewheat pita & a little Pam spray (I also sprinkle with a little chilli!). Cut into triangles, separate into individual layers, & bake at 400 - watch closely - they change from cooked to burnt quickly!

I did find a recipe on the back of the Rotel tomatoes can. It's all core, you just have to figure out what to use to dip. They suggest toritilla chips, tacos or burritos which you can use WPA for.

 

Black Bean Salsa

 

1 can (15 oz) black beans, drained, rinsed

1 can (10 oz) Rotel Original Diced Tomatoes & Green Chilis, drained

1/2 cup whole kernel corn, frozen or canned

1/4 cup finely chopped red onion

1/4 cup finely chopped fresh cilantro

1 tablespoon lime juice

1/4 teaspoon ground cumin

 

Mix all ingredients in medium bowl. Cover and refrigerate 30 minutes to allow flavors to blend.

 

Serve with tortilla chips (WPA), fresh veggies, etc.
