4 point baked asian chicken (not spicy)

Hello all,

 

 

 

I modified this recipe from the May/June 2008 edition of WeightWatchers magazine. It was supposed to be for steamed turkey, and spicy, but I don't like spice and I couldn't find any pre-cut turkey breasts at the grocery store (weird, huh?). But I did find chicken, and decided to bake it. I added a few of my own ingredients and took away some from the recipe. I just made it, and it turned out AWESOME! The whole thing was super easy, and would go really well with some steamed broccoli and maybe some rice. Even my little brother, who is not on WW, tried some and wanted more. But I didn't let him... it's for my easy reheatable dinners!

 

 

 

Ingredients:

4 chicken breasts

2 Tbsp. Reduced-sodium (lite) soy sauce

2 Tbsp. Hoisin sauce

2 Tbsp. Honey

2 Tbsp. Olive oil

1 Tbsp. Chopped garlic

2 fresh scallions (onions) chopped

1 Tbsp. lemon

Combine soy sauce, hoisin sauce, honey, olive oil, garlic, scallions, and lemon in a medium bowl. I also added a small amount of water (probably somewhere around 2 cups). Add chicken breasts and toss to coat. Marinate chicken for at least 5-10 minutes. Preheat oven to 350 degrees. Pour marinade and chicken breasts in a medium glass cooking pan. Bake in oven for 30 minutes, turn chicken over, and bake for 50-60 minutes or until chicken is no longer pink. Remove from oven, cut chicken in half, and enjoy! Half of chicken breast = 4 points.

Sounds MMM-mmm good! Maybe I'll serve the leftovers for lunch on a bed of salad dressed with some sesame-ginger dressing.

I tried some leftovers also with a 1 point whole grain wrap, with 1 point slices of mozzerela cheese and fresh lettuce and it was the most amazing 6 points I have eaten in a while!

This sounds really good. It is on the menu for the week. I am thinking that I will try cooking it in the crockpot. On low all day. Thanks for sharing.

Did you really add 2 cups of water to the mainade? It sounds like it would really dilute the flavors. :bcb_confu Maybe it's 2 T?
