Laurdee 0 Posted July 14, 2001 From www.allrecipes.com Made this today~~excellent! and so easy!  12 Servings~~2 points each  Ingredients 1 1/2 cups all-purpose flour 3/4 cup white sugar 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 2 egg whites 1 cup banana, mashed 1/4 cup applesauce   Directions 1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. 2 In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan. 3 Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing. I ate a slice of the b-bread that came with the fruit plate at Bob Evans the other day and have been wishing for a tasty low-fat loaf I could make at home. Laurdee 0 Posted August 12, 2001 I went back and checked the nutritional facts with the recipe... cal 130 fat 0 fiber 1  Comes out to 2 pts per serving, which is what I count it as.  It's really good though! My DH eats peanut butter and banana sandwiches every day and sometimes I need to use up some very ripe bananas. This recipe is a perfect fix for that. Â I use whole wheat bread flour, 1 cup and 1/2 cup soy flour plus 1/4 cup brown sugar and 1/2 cup splenda and it still tastes great. It also makes the servings 1 point each. MAkes portion control easier. I found from a nutrition program that 1/4 c of walnuts would not raise the points above the 1pt in CG's version. Just be careful if you eat more than one! Then put them in a plastic bag ...so easy to grab just one slice & it thaws in no time.Can do the same with muffins. Â I also use 1/2 cup honey instead of the sugar. Â I double the recipe and make 2 loaves and we eat it up fast!! Dawn1943 0 Posted November 12, 2001 rsawad, Can you get fresh apples I make my own applesauce .I peel and cut up apples in about 8 pieces and put in a pan with a little apple juice or just plain water and cook it with some splenda . If I am eating it I put in some cinnamon for this recipe I wouldnt put cinnamon in it .the apples dont take very long to cook.I leave them chunky, I usually do about five apples at a time. Looking at this recipe it already has egg whites and they are using apple sauce for the oil . I have used baby food in the jars applesauce or baby food prunes.You might not be able to get that either though. curlieq 0 Posted November 13, 2001 Banana bread was one of my mothers all time best breads that she made, she has sent it all over the country to her grandchildren and children, she doesn't make banana bread anymore, she just doesn't do make baking, no need, she is coming over for lunch this afternoon so I think I'll make some so she can take some home with her I think she will be pleased.
