cybergranny 0 Posted September 22, 2001 I usually make the tablespoons of gluten flour into 'heaping' tablespoons to ensure good rising.   Light Rye Bread  1-pound loaf (10 servings)  3/4 cup water 1.5 tablespoons Splenda 3/4 teaspoon salt 3/4 cup (4.1 ounces) whole wheat flour 3/4 cup (3.9 ounces) unbleached flour 1/2 cup (2.1 ounces) rye flour 2 tablespoons gluten flour 2 teaspoons cornmeal 1 teaspoon caraway seeds 1.5 teaspoons active dry yeast  Put the ingredients in the bread pan in the order listed. Reverse the order if the manual for your machine calls for dry ingredients first. Select Basic Wheat Cycle, Light setting (or the equivalent setting for you machine). djc2 0 Posted January 21, 2003 I finally got around to making this bread over the week-end and I have to say it is really good rye bread..definitely will be making this again. I didn't make it in the bread machine, I just baked it in loaves. Shana1 0 Posted March 18, 2003 I doubled this recipe and made a 2 lb. loaf. I could only get 11 slices at 2 pts. each. It tastes great and next time I will try using the dough cycle and baking in a loaf pan so I can get more slices. I hate to make a 1 lb. loaf because it goes too fast.
