Miso Soup with Spinach & Tofu

This is marked "Core" in my cookbook. I find Miso soup works better than chicken soup when you have a cold. :bcb_smile

 

Miso Soup with Spinach & Tofu

makes 4 servings

 

8 strands wakame ( dried seaweed)

4 cups reduced-sodium chicken broth

2 cups baby spinach, chopped

1/4 lbs. extra firm tofu, cut into 1/4 inch cubes

2 TBS miso

 

 

Place the wakame in a large bowl. Add enough hot water to cover. Let stand until the wakame softens, about 10 mins. Drain, cut out tough center rib and discard. coarsely chop the rest and set aside.

 

In a medium saucepan, bring the broth to a boil and add the wakame. Reduce heat to low and simmer about 20 mins. Add the spinach and tofu and cook about 3-4 minutes. Remove from heat.

 

In a small bowl, combine 1/4 cup of the hot broth with the miso until blended. Stir into soup and serve at once.

 

Serving 1 cup of soup, 88 calories, 3 gr fat, 3 gr fiber.

OMG!!! I just had this yesterday at a Sushi restaurant in NYC and had told my son I wanted to find out how to make it.

 

Where do you find the seaweed in a food store? Is it the same dried stuff you use to make sushi?? and was is Miso?? a seasoning ??

I have a Wegman's here in PA. They seem to have just about everything. I get both the seaweed (you could use the sushi stuff) and the miso (in a can) in the Asian section.

Made this last night and it was a hit! So good and so easy! I had to get the miso in a 1 lbs bag (plastic), so there's lots leftover. I looked online and found that the miso will keep up to a year in the fridge. I also found some other ways to use the miso.

 

Marvelous Miso Hummus

 

SERVES: 2 - 4

 

  • 1 cup chickpeas, cooked


  • 1 lemon, juiced (1½ Tbsp juice)


  • 2 cloves garlic


  • 2 Tbsp Miso Master ® Organic Chickpea Miso


  • 2 Tbsp tahini


Blend all ingredients in a food processor or blender. Serve as dip for pita bread, crackers, or veggies, or as a delicious sandwich spread with red onion, lettuce, and tomato.

Miso Salsa

 

YIELD: 6 -1/2 CUP SERVINGS

 

  • ¾ Cup Whole Kernel Corn, Drained


  • 1 Tbsp. Lime Juice


  • ½ Cup Red Bell Pepper, Chopped


  • 1 Tbsp. Extra Virgin Olive Oil


  • ¼ Cup Scallions, Chopped


  • ¼ Tsp. Cumin


  • ¾ Cup Fresh Tomato, Chopped


  • 1½ Tsp. Chili Powder


  • ½ Cup Green Bell Pepper, Chopped


  • 1/8 Tsp. Black Pepper


  • 1 Tbsp. Jalapeno Pepper, Minced


  • 1½ Tsp. Fresh Cilantro, Chopped


  • ¼ Cup Reserved Corn Liquid (Optional)


  • ¼ Cup Miso Master® Org Chickpea Miso


In a bowl, mix lightly all the vegetables. Dissolve miso in reserved corn liquid and add to vegetables. In a separate bowl mix the remaining ingredients and add to the vegetables. Chill and serve with corn chips, burritos, or any Mexican dish.

I did make the Miso soup, added shrimp to it.....no seaweed as I do not like it.....it is my new favorite soup! ....I've had it a couple times now and if you're looking for a low point lunch, this is it.....Thanks so much for the recipe! :bcb_up:bcb_up
