chicken tortilla soup

Hey everyone!! just thought i'd post a DELICIOUS recipe i tried for dinner tonight!! It's for a crock pot (slow cooker) but you could definitely just make it on the stove!



3 boneless, skinless chicken breasts

1 can (4 oz) chopped mild green chilies, drained

2 cloves of garlic, minced

1 yellow onion, diced

2 cans (15 oz. each) diced tomatoes, undrained

1/2 cup fat free chicken broth

3 tbs. taco seasoning

Salt and Pepper to taste (i used about 2 tsp. of each)

3 tortillas (1 point each [i use 'Don Pancho' brand])

1/2 cup shredded Monterey Jack cheese (points value for recipe is for regular cheese...i couldn't find reduced fat!)



  1. place chicken breasts into crock pot on LOW
  2. combine chilies, garlic, onion, tomatoes, broth, and 1 tbsp. taco seasoning in a small bowl. pour over chicken
  3. cover; cook on LOW for 6 hours, or on HIGH for 3 hours until chicken is tender
  4. remove chicken and shred using 2 forks; return to crock pot
  5. add the remaining 2 tbsp. seasoning and stir
  6. cut tortillas into 1/4 inch strips and stir into crock pot
  7. serve with shredded cheese on top!

this technically makes 6 servings at 4 points each; however, i could hardly finish 1/2 of a serving!! so filling and yummy!! :bcb_bigsm
