Bisquick - Spinach & Feta Pie - 2 pts

Serves 6 - 2 pts slice

 

1 pkg (10 oz) frozen chopped spinach, thawed and squeezed to drain

1/2 cup crumbled lite feta cheese

4 medium green onions, sliced (1/4 cup)

1/2 cup reduced fat bisquick

2/3 cup skim milk

1/4 tsp salt

1/8 tsp pepper

Egg substitute (to equal 2 eggs)

 

Heat oven to 400. Spray 9" pie plate with cooking spray.

 

Mix spinach, cheese and onions in pie plate.

 

In a bowl, stir remaining ingredients together and pour over spinach/cheese/onion mixture.

 

Bake 30 - 35 minutes or until knife inserted in centre comes out clean. Let stand for 5 minutes before serving.

I tried this tonight. I sauteed the onions and also added some mushrooms. It was ok.....very spinachy.......I may cut down on the amount of spinach I use next time. Seemed a little dry to me but the flavor was good.

I made this the other night and loved it, even though I'm not a spinach lover. Even my dh loved it. Mine wasn't dry at all. Thanks for posting this one.

I made this yesterday and it was really good with lots of flavor. Will have it again today. I had it with brussle sprouts as a side dish and V8 as my beverage. A good way to get those veggies in. This one is a keeper!

I have bever seen low fat feta cheese. What is the points difference verses regular feta....does anyone know?

I buy low fat Feta since I can't taste the difference and it is half the points

 

Athenos Reduced fat Feta

1/4c 60 cal 4g fat which is 2 points

 

where the reg is 3 points

 

I have found it at Savemart, Albertsons and Safeway
