Guest jill-leigh Posted November 15, 2009 I didn't originally come up with this recipe... I saw something very close on Everyday Italian and HAD to try it. It turned out amazing!  Servings: 2 Points: 9 (whole recipe, 4.5 per serving)  Ingredients: 1 small garlic clove (0) 1/2 c. fat free ricotta cheese (1) 1-2 cups fresh spinach (as much as you'd like, really) (0) 4 tsp. Parmesean cheese, divided (1) 4 oz. whole wheat rotini or penne (6, 3 per serving) 2 small spoonfuls pasta cooking water  Directions: Boil water and cook pasta.  In a blender, combine garlic, spinach, ricotta and 2 tsp parmesean cheese. Blend until smooth.  Add to warm pasta, and add 1 spoonful of pasta water to each serving, or 2 spoonfuls for one big serving. Mix well.  Top each servings with 1 tsp. of parmesean.   *Note: You could try many variations of this. Adding tomato might be really good. I'm thinking of adding parley or cilantro.
