Mandarin Slaw

Mandarin Slaw

 

1 ½ cups shredded carrots

1 ½ cups shredded red cabbage

4 scallions, thinly sliced

1 11 oz can mandarin oranges, drained

2 tablespoons white vinegar

2 teaspoons sesame seed oil

1 packet Splenda

 

In a medium bowl, combine carrots, cabbage, scallions, and oranges. In a small bowl or cup, whisk together vinegar, oil and Splenda. Pour dressing over slaw and toss.

 

6 servings at 1 point each

I made this tonight, and it's a real winner!

 

The colors are gorgeous and it tastes fantastic!

 

I'll definitely be adding this to the "regulars" list.

This time, I used seasoned rice vinegar, and it was AWESOME!

I'd love to make this for tomorrow's cookout. How much Splenda is in a "packet"? I only have the pourable type!

It's funny. My DS says he thinks the packets are "sweeter" than the pourable...but that hasn't been scientifically proven! ;) :D wave.gif Carol

Carol...your hubby is right. The packets are much sweeter than the pourable splenda...the pourable splenda has a good amount of filler (that is not sweet) but allows you to use it measure to measure as a replacement for "regular" sugar in recipes. smile.gif

Ok, but I'm making this in a few minutes, and I still don't know how much POURABLE Splenda to use!!! 1 teaspoon? 1 tablespoon? I guess I'll just have to "taste test" it and see!!!

OK..made it and everyone RAVED about it!! Except my mother, who now claims she can't eat cabbage...go figure!

 

As for the Splenda, I have no idea how much I actually added...I added a bit extra, cause I added extra cabbage and extra carrots! It was excellent!!!
