Microwave flourless chocolate cake

 

This is super easy and really quite good. Satisfies that chocolate craving! I usually have mine with a dollop of fat free cool whip

 

1 egg - beaten

1/2 tsp vanilla extract

1 tbsp skim milk

2 tbsp cocoa powder (not core, but 0 points)

5 packets splenda (or to taste)

1 tsp baking powder

1 tsp oil

 

Mix all ingredient in microwave safe container. Microwave 1-2 minutes depending on your microwave (don't overcook or it will be dry). Good warm right out of the oven, or cool and enjoy later. I will sometime put it in the fridge and then top with some ff/sf chocolate pudding and a dollop of ff cool whip for a very chocolatey decadent treat!

I made this and it is very tasty. I nuked it 75 seconds but next time I would only do 60 seconds. I used Hershey's Dark Chocolate Cocoa so I used more Splenda. I like the fact that it has an egg and oil in it - I could eat it for lunch one day.

I really loved this cake, it is the best core chocolate cake that I have tasted. It is spongy like cake, can not detect the egg at all. I was very surprised and very happy. I cooked for 60 seconds, will probably do it for 50 seconds next time. Would be AWESOME with some vanilla ice cream (count points) !!! Thank you so much for this great recipe !

I just tried this cake, honestly...not expecting much. I have tried chocolate cake from the core board before and been very disappointed. I was so shocked when this popped out of the microwave and was this light fluffy little personal cake. It was truly wonderful. I am not a big "sweet" fan, so it was actually pleasant not to have that tremendous sugary taste you normally get with "real" chocolate cake, this was perfect. I put some FF whip on top and couldn't even eat the whole thing, ate half. Am saving the other half for after dinner! Thanks!

To alter this recipe, is it possible to use an EggBeaters egg serving instead of a regular egg? Also, instead of oil can you use applesauce, or just omit it completely? Haven't tried it yet...I do Flex...so I'd like to lower the points value.

Just wanted to say I have made this several times and it is really good. I am going to try letting it cool and then adding the pudding to it. Sounds like it would be good.

I frequently make this without the oil and it turns out just fine, maybe just a tad dry, so if you skip the oil, undercook it just a little bit. What I do to save time, I went to the dollar store and bought a bunch of small microwave safe tupperware like bowls, I pre-measure out the dry ingredients into each one - and store it in my cupboard, then I just need to add my egg and skim milk (and oil, if I'm using it that day) and mix and microwave.

I think a packet is equal to 2 tsp of sugar, but I'm not positive. I have made this with bulk splenda before and I used 2 tbsp - 1 might even be enough, depending on your individual taste. Play around with it and see what you like. It's really good and so easy! :)

I just wanted to say Thank You, this recipe is really soooooooo good... I've been a BCB fan for a long time...and would always copy down recipes but this time I actually signed up because i wanted to say how good this recipe was.. not at all like i was expecting. I was figuring it would be like chocolate scrambled eggs or something.. (which it wasn't) it was amazing.. very rich and chocolatey! I mixed mine with Truvia instead of splenda (it tastes alot sweeter i think) and mixed it in my magic bullet blender so it came out perfectly smooth, the batter even looked right!, it came out perfect.. even looked like cake. very good! thanks for posting!
