Brown rice and Lentil casserole

6 servings 4pt

3C broth I used beef

3/4C brown rice

1/2C lentils

3/4c chopped onion

1t Italian seasoning

1/t garlic powder

1C grated cheese (I used 2% cheddar)

Mix all ingredients except cheese in baking dish (I used 10x7)

Cover w/foil and bake in preheated 300 oven

remove foil top with cheese and bake another20 minutes

 

I also precooked the rice but the recipe didn't say to . Since I did that I reduced the broth to 2C

The lentils should be dry/uncooked?

I made this for supper tonight using Bulgar instead of Brown Rice. It was really good and DH liked it too. It will be a repeat recipe in this house!

Easy and Good. I had never eaten a lentil before. Now I'm finding them everywhere. I used crushed garlic because we really like garlic. Thanks!

Made again yesterday but used bulgur in place of the rice and after the cheese melted I added some drops of Franks hot sauce. Excellent
