COW muffins

This basic recipe was on the FF board, but I made some changes....

CREAM OF WHEAT "MUFFINS"

 

2 cups cream of wheat

1 cup splenda (1/3 c fructose)

2 tablespoons canola oil

1.5 cups water -- or fat-free milk (I used milk)

2 eggs

6 tablespoons unsweetened applesauce

1/2 teaspoon salt

1 teaspoon vanilla

1.5 t baking powder

 

I added 1 chopped apple

 

1. Preheat oven to 400°. 2. In a large bowl combine all ingredients, stir. Pour into muffin pans filling 3/4 full. Bake 18-20 minutes or until center is firm to the touch.

 

You could make other changes, like reducing or eliminating the oil and replacing with more applesauce...chocolatizing...adding spices etc.

 

Last time I used chopped apple and cranberries, reduced the oil and upped the apple.

This might be a dumb question but it looks like the cream of wheat is uncooked in the recipe??

Sorry I didn't see this till today, but yes, the cream of wheat is uncooked when added to the recipe (used like flour)

These are very good. I grated an apple and added it and cinnamon.

I reduced the splenda and added a chocolate SF/FF pudding mix. And used Olive oil, I don't touch canola...they are very good, and a batch lasts all week. I eat them with some FF cheese or an egg....
