Italian Broccoli and pasta

I have not made this but it sounds good. It came from a newsletter I receive from Aboutproduce.com

 

Italian Broccoli and Pasta

INGREDIENTS:

2 c broccoli florets

1/2 t thyme, dried

1 can (14 1/2 oz) stewed tomatoes, not drained

2 c fettuccine noodles, uncooked, eggless

3 T green onions, chopped

1/2 t oregano, dried

1/2 t pepper

2 t Parmesan cheese

 

PREPARATION METHOD

Cook fettuccine according to package instructions (omitting oil and

salt) and drain. Spray a skillet with non-stick spray and stir-fry

onion and broccoli for 3 minutes. Add seasonings and tomatoes and

simmer until heated throughout. Spoon vegetable mixture over

fettuccine and top with Parmesan cheese. Makes 4 servings.

Calories: 149

Fat: 1 g

Calories from Fat: 7

Fiber: 3 g

This sounds great. I try to find all this type of recipes and make them for my lunchs instead of buying WW smart ones.As you can even cut down more on your points. thumbup.gif
