Ziti Bake

My husband and I tried it this week and LOVED it. And it's so easy!


1/3 lbs ground beef or turkey

12oz ziti pasta, cooked

1 cup low-moisture, part-skim mozzarella cheese

1 clove garlic, diced

1 small onion, diced (~1/2 cup)

1 teas of oil, or a little Pam

1 small zucchini (~1/2 cup)

1 can sliced mushrooms (small can)

28oz can crushed tomatoes

1 teasp oregano (dried)

1 teasp thyme (dried)

1 teasp rosemary (dried)

1/2 teasp pepper

1/2 teasp salt


Set oven to 350.


Heat oil in skillet and saute the garlic and onion. Add ground beef and brown. Drain off the fat. Add herbs, salt and pepper and saute for 2 mintues. Add zucchini and mushrooms and saute for 2 minutes. Add crushed tomatoes. Bring to boil and then lower heat to saute for 10 minutes.


In a 4 quart baking dish put enough of the tomato mixure to just barely coat the bottom of the dish. Add 1/2 the cooked ziti, 1/2 the remaining tomato mixture, and 1/2 of the cheese. Layer again with the remaining ziti, tomato mixture, and cheese.


Bake in oven for 30 minutes or until cheese is bubbling.


This makes 8 1-cup servings for 6.5 points.


***Other veggies are good in this as well. If you add more than two you might need to add some water at the same time you add the crushed tomatoes.
