Penne, Smoked Turkey & Orange Salad

I just had to share this one! I just made it and now I can't keep my hands off of it. This is a definite winner and makes 2 HUGE servings.

Penne, Smoked Turkey & Orange Salad

 

2 cups Fresh Baby Spinach, chiffonade

1 cup Cooked Penne (or short stubby pasta of choice)

2 ounces Smoked Turkey (I used Sara Lee)

1 (12 oz can) Mandarin Orange Sections, drained

3 tbsp Light Italian Dressing of Choice

 

Combine all ingredients together in a large bowl. Cover and refrigerate at least one hour to blend. Let stand at room temperature for 30 minutes before serving.

 

Serves 2 at 5 points each.

Paris-

 

Just had to let you know that I tried this salad today, and the WHOLE family simply loved it. I didn't have a chance to refrigerate for an hour, and it still tasted wonderful!

 

I will be keeping this one handy!

Hi Paris, This looks terrific! But, I have a question.

That Sara Lee smoked turkey...do you mean the cold cut variety you would get in the deli, or something else?

DeAnna - I am so glad that you liked it! I made it again this week. This is such a keeper!

 

Dawna - yep, Sara Lee cold cut deli meat from the deli counter. I get it sliced thin and do a stubby chiffonade cut on it.
