Guest eaglssong Posted May 13, 2000 From Carolyn   Pumpkin Squares (2 points)  For pumpkin pie fans, this is an excellent substitute. The "crust" is more like a cookie than a pastry.  Dough: 1 cup all-purpose flour 1/8 tsp baking soda 1/3 cup regular sugar 2 Tbsp margarine 1 large egg  Filling: 1 cup pumpkin puree (canned) 2 egg whites 1 large egg 3/4 cup evaporated skim milk 1/2 cup brown sugar, packed firmly 2 Tbsp all-purpose flour 1 tsp ground ginger  Preheat over to 350F. Spray 8" square baking pan with vegetable cooking spray.  In a large bowl, beat (high speed) together sugar and margarine until light and fluffy. Beat in egg. At low speed, beat in baking soda and then the 1c flour until a dough forms. Press dough into prepared pan, allowing it to cover the sides and the bottom. Prick the top with a fork. Bake until golden (approx 15 minutes).  Prepare filling in a large bowl, combining: pumpkin, egg whites, egg, milk, b. sugar, 2T flour and ginger. Pour filling into prepared crust (it need not be cooled). Bake until set (approx 40 minutes). jendear75 0 Posted October 22, 2001 I tried these, substituting egg substitute for the egg whites (didn’t have the extra eggs). Use the egg whites – my squares tasted a little eggy. I also accidentally poured the filling into the crust without baking it first. I just cooked it for 55 minutes total & it turned out beautifully. I also added a dash of cinnamon & nutmeg to the filling.
