Angel Macaroon Cookies

Angel Macaroon cookies

 

1 angel food cake mix( 1 step kind)

2 cups coconut

1/2 cup water

1 tsp. almond,, lemon, or orange extract(my favorite is lemon)

Mix all and drop by tsp. on a pan sprayed with nonstick spray.Bake at 350 degrees for 10 minutes. 5 cookies = 3 points.

 

These are great and could be tinted in different colors for the holiday season.

Duncan Hines and Pillsbury both make a 1 step mix. Just look on the back to make sure that only 1 step required.As to # of cookies, I believe it was 72, but I am staying with my parents while remodeling my home and recipe is at my house! Hopefully back home tommorrow and I will post if different #.

I made these today and they are YUMMY! I got 80 cookies. A couple of suggestions if you make them....space them out as they spread and be sure to remove them from the baking sheet immediately.

 

I calculated the calories and points and here is what I got...

 

1 cookie = 35 cal .7g fat .2 g fiber 1pt

2 = 70 1.4 .4 1 pt

3 = 1.5 2.1 .6 2 pt

4 = 140 2.8 .8 3 pt

5 = 175 3.5 1 4 pt

6 = 210 4.2 1.2 4 pt

 

These cookies are great. They are light and chewy and just delicious!

And for those of us who know that 80 delicious cookies in the house would be a DISASTER, I made a quarter recipe today and it turned out great. My angel food cake mix was 16 oz net wt, so I weighed out 4 oz and went from there. I would suggest using slightly more than a 1/4 tsp of flavoring with the divided recipe. I used almond, and it could use just a drop or two more.

 

Thanks for sharing the recipe! I love coconut macaroons, but have not had the heart to spend the points on them - these are delicious and so point friendly!

Another good angel food recipe is using a can of peaches instead of pineapples.. just cut/mush up the peaches a little before adding in with the mix.. yummy!
